Ingredient Notes:

Fresh Spinach- Use fresh spinach in this recipe. It will give us a great flavor and beautiful color too.

Garlic- You can use fresh garlic or jarred minced garlic, depending on what you have on hand.

Red Pepper Flakes- This will add a tiny kick of heat to really make these eggs feel special.

Cheese- This is completely optional, but if desired, you can add cheddar cheese or feta cheese to the top of your eggs when serving.

Egg Whites only. You can modify this recipe by using only egg whites if you'd like to make it a lighter option. I suggest using 6-8 egg whites to ensure there's enough for this dish.

Different tomatoes. Don't have cherry tomatoes? Diced Roma tomatoes or colorful grape tomatoes will also work well.

Canned or frozen spinach. If you don't have fresh spinach, frozen or canned will work in a pinch. Just make sure that they're thawed, rinsed, and drained well so that they aren't adding too much extra moisture into the eggs.

Step 1: Heat your olive oil in a frying pan over medium heat until sizzling.
