    If you like traditional mojitos with lime and mint, you are going to adore this fresh, fruity, strawberry version. It’s so perfect for warm summer evenings. Truly the taste of summer!

    I’ve already shared my Pineapple Coconut Mojito recipe (those tropical vibes, y’all – so good) and a sweet little Blueberry Mojito that’s surprisingly sophisticated. But this strawberry version is truly special. It might just be my very favorite!

    What Is a Strawberry Mojito Made Of?

    This is a really simple, easy-to-make drink, with just a handful of ingredients. Here’s the list:

    • Simple Syrup: You can use this easy Simple Syrup recipe, or just use store-bought.
    • Strawberries: A couple of large fresh strawberries, sliced – or more, if the berries are on the smaller side.
    • Mint: Fresh mint leaves are a key ingredient in a mojito. You can buy the leaves only, or grab a mint plant to have fresh leaves all summer long. It’s easy to grow indoors and out.
    • Lime Juice: Freshly squeezed lime juice is the best, but bottled lime juice will also work.
    • Rum: A good quality white rum is best.
    • Club Soda: Or sparkling water or seltzer.

    White rum is definitely the most commonly used alcohol for a mojito. It has a sweet, light, versatile taste with plenty of personality, perfect for combining with lime and mint. For this strawberry mojito, you can’t beat it!

    Making a strawberry mojito is all about building the drink gently in the glass, so that the flavors blend without bruising the mint. These steps and photos will show you how.

    • Muddle the Mint and Strawberries. In a large highball glass, muddle together the simple syrup, sliced strawberries and mint leaves. Be gentle, or the drink may taste bitter!
    • Add Rum and Lime. Stir in the rum and lime juice.

    • Top with Ice and Club Soda. Add ice, all the way to the top of the glass, and then top with club soda.

    Tips and Tricks

    Every drink recipe has its inside info, those helpful do’s and dont’s that make the drink a success (or not). Here are my top tips for a great strawberry mojito:

    • Muddling: “Muddling” means gently mashing herbs and/or fruit, to release the oils or juices. I recommend using a muddler for best results, but the back of a wooden spoon can be used in a pinch.
    • Mint: Mint is extra-delicate in drinks, so handle with care. If you press the leaves (or slap them gently on the counter), that’s great! The oils will begin to release and flavor the co*cktail. But if you crush or tear them, you’ll also release the inner plant flavors, adding a bitter or salad-y taste.
    • Mint Syrup: If you don’t want to bother with fresh mint, you can substitute mint-flavored simple syrup instead.
    • Rum: Avoid using gold or dark rum for this recipe – it’s a little too strong to pair well with strawberry and mint.
    • Demerara Syrup: Simple syrup made from demerara sugar has more body and warm, toasty flavor than plain simple syrup, and makes a great addition to the drink.

    Easy Strawberry Mojitos for a Crowd

    To make mojitos for a crowd, I recommend quadrupling the recipe to make 4 mojitos. (You could make even more, if desired). Muddle the mint, simple syrup, and strawberries together in a large glass jar, and then divide the mixture into 4 glasses. Add the rum and lime juice to each glass, top with ice, and then the club soda.

    Strawberry Mojito Recipe

    Ingredients

    • 1 oz simple syrup
    • 2 large fresh strawberries, sliced (or 3 medium)
    • 6 fresh mint leaves
    • 1 oz freshly squeezed lime juice
    • 2 oz white rum
    • 4 oz club soda

    Instructions

    • In a large highball glass (16 oz), muddle together the simple syrup, sliced strawberries and mint leaves. (Muddling is a technique used to gently mash herbs and/or fruit to release the essence or juices. I recommend using a muddler for best results, however the back of a wooden spoon can be used in a pinch.)

    • Stir in the rum and lime juice.

    • Top with ice (to the top of the glass) and then top with club soda.

    • Garnish with mint and strawberries, if desired.
